tuesday - south pacific shrimp with brown rice

Last night I made this recipe for South Pacific Shrimp from I followed the recipe almost exactly--the only exceptions were that I used 2 teaspoons of chili garlic sauce instead of the serrano chiles (use less if you don't want it too spicy) and arugula instead of spinach. The sauce is so, so delicious with the blend of coconut milk, lime juice, and ginger. I served it over brown rice that was left over from Sunday night.
