thursday - well...

One of the things I've struggled with the most since becoming really diligent about following a meal plan is when things come up mid-week. Friends invite us over for dinner, some evening event crops up, or, like last night, we decide to go see a movie and there isn't time to cook dinner first. I'm always concerned about the possibility of wasting produce when the plan gets derailed. Luckily, my husband had snacked on all of the carrots throughout the week, so I had already nixed the carrot-ginger soup. The swordfish hadn't been defrosted yet, so it's still hanging out in the freezer. The 4-lb. bag of quinoa is still sitting tight on the top shelf, and the leftover chimichurri I was going to stir into it had already been transferred to the freezer. So, to the movies we went! We ate snacks at the theater (a veggie wrap, popcorn, and a cider), then had a big salad when we got home--butter lettuce, cucumber, goat cheese, sun-dried tomatoes, and lemon-olive oil dressing. Oh, and we did stop for gelato after the movie, which seemed like a perfect treat for the chilly, rainy walk home.
